Cuisines: Xinjiang
Yershari has grown into one of Shanghai's more visible Xinjiang restaurant chains, with branches spread across Hongkou, Pudong, Xuhui, and Changning districts, and the Dong Fang Lu location in particular has built a following for its everyday version of Uyghur cooking rather than a special occasion one.
The menu draws on the grilled meat tradition of China's northwest. Shashliks, skewered and cooked over open coals, sit at the centre of the table alongside a grilled mutton chop and a stewed chicken dish built on potatoes and dried chili. Stir-fried noodles, thick and hand-pulled, round out the savoury side of the menu, and a home-made yoghurt, tangier than the commercial versions found in most Shanghai supermarkets, is served as both a side and a way to cut through the richness of the grilled meats. The cooking leans on cumin, chili, and the char of the grill rather than the soy-based sauces more common in the eastern Chinese cooking found elsewhere in the city, a reminder of how far Xinjiang cuisine sits from the coastal Chinese food most visitors associate with Shanghai.
Dong Fang Lu runs through a residential and commercial stretch of the city, and the restaurant itself keeps a straightforward, canteen-like setup built for groups sharing a spread of skewers and noodles rather than for a slow, plated dinner. It draws a mix of Xinjiang and Hui diners living in Shanghai alongside curious locals and visitors, a pattern reflected across most of the chain's branches, and its position as one of several Yershari locations across the city means diners in other districts can find a broadly similar menu closer to home.
