Cuisines: Hui Muslim Cuisine

The beef pan-fried bun at Yixinzhai carries an official distinction that goes beyond most restaurant specialties: the technique used to make it has been listed as part of Shanghai's intangible cultural heritage, the only halal dish in the city to hold that status. The restaurant on Pingliang Road in Yangpu District has been serving the dish, along with the rest of its beef centred menu, for long enough that longtime residents describe eating there as children.

The bun itself is pan-fried until the base turns crisp and golden while the top stays soft, filled with a beef mixture seasoned closer to the savoury, cumin inflected style associated with Shanghai's Hui Muslim community than to the pork-based versions found at most of the city's dumpling shops. Alongside it, the kitchen makes beef potstickers with a thinner, more delicate wrapper, and a stir-fried rice cake tossed with shredded beef and vegetables that has become one of the more requested non-bun items on the menu. A dry pot cauliflower, cooked until the edges char slightly, and a plate of clams stir-fried in scallion oil round out a menu that otherwise stays close to its Muslim Chinese roots.

Yangpu District sits along Shanghai's northeastern waterfront, once dominated by factories and now home to a mix of universities and older residential neighbourhoods, and Pingliang Road runs through one of the area's more established commercial stretches. A recent renovation gave the dining room more space than the restaurant is remembered for having in earlier decades, along with private rooms for larger groups, though the restaurant has kept the unfussy, canteen-style service that regulars associate with it. The combination of low prices and heritage status has made it a stop for visitors tracking down Shanghai's older Muslim quarter food traditions as much as it is a neighbourhood lunch spot.
