Pin Hui Wei is the original branch of a small regional chain that has since opened further outlets on Nanjing Road Pedestrian Street and near the Bund, but this Changshou Road location remains the one that started it all.

The kitchen leans heavily on Hui and Xinjiang traditions, and the menu reads like a tour of that region's staples. Hand grabbed lamb arrives simply seasoned so the meat itself carries the dish, while hand torn numbing pepper chicken pairs the sharp tingle of Sichuan style peppercorns with a milder, more savory northwestern base. Naan stuffed and topped with meat gives the bread a role beyond an accompaniment, and grilled lamb ribs come charred at the edges with a smoky finish. Rice eaters can order the Xinjiang style pilaf, cooked with carrots and lamb fat until the grains take on a deep amber color, or the lamb soup thickened with torn pieces of flatbread, a dish meant to be eaten slowly as the bread softens. Cold skin noodles offer a lighter, chilled contrast, dressed in a spiced sauce with a smooth, springy bite.
