The restaurant is the first shabu-shabu outlet from the premium yakiniku brand Tenkaichi no Yakiniku Shoutaian, which originated in Funabashi, and carries forward that brand's deep commitment to beef quality and culinary excellence into the hotpot format.
The beef at the heart of the experience is Tenkogyu, a proprietary Wagyu brand developed exclusively by Shoutaian. The name carries layered meaning: "Ten (天)" evokes heaven's blessings, including fertile land and pure water, while "Kou (幸)" expresses gratitude for life and nourishment. The cattle are raised in the open fields of Hokkaido and Kyushu, drinking clean spring water in an environment that produces beef of extraordinary tenderness, deep umami, and a signature aromatic richness. Every cut is prepared under halal supervision with prayer and care, ensuring that the spiritual integrity of the ingredient matches its exceptional physical quality.
The shabu-shabu experience at Shoutaian is served in individual pots, one per guest a thoughtful and hygienic format that allows each diner to cook at their own pace and to their preferred doneness. Thinly sliced Wagyu is swished through a light, carefully crafted dashi broth for just a few seconds until it achieves the ideal silky texture, then dipped in either a refreshing ponzu sauce with grated daikon or a rich sesame paste. Diners can choose between domestic halal beef and the premium Tenkogyu black Wagyu, and may also select their preferred portion size. Each set is served as a Gozen course, including three appetisers of the guest's choice, savoury chawanmushi (steamed egg custard), a generous platter of assorted vegetables, and a bowl of Koshihikari rice from Chiba Prefecture — one of Japan's finest rice varieties. The sukiyaki format is equally celebrated, with the Wagyu simmering in a deeply savoury halal sukiyaki sauce that brings out its natural sweetness and creates a rich, intoxicating harmony of flavours.
Beyond the hotpot selections, the restaurant also serves the celebrated Shoutaian Hamburg Steak throughout the day a melt-in-your-mouth patty of premium Japanese black beef, available with three sauce choices: Japanese-style ponzu with grated daikon, rich demi-glace, or a cheesy demi-glace. For those seeking a more adventurous preparation, the Grilled Marbled Wagyu Beef Loin is lightly grilled and paired with a creamy raw egg yolk, delivering an intense burst of rich Tenkogyu flavour. Snow crab shabu-shabu and lean ribeye options are available for variety.
